The weather in my neck of the woods: Currently 77 degrees, mostly sunny and very windy.

Things that make me happy: Still getting hugs from my children even though they are teenagers.

My daughter’s book The Year I Turned Sixteen by Diane Schwemm (I enjoy reading young adult fiction) I don’t know if the author intended it or not but it makes me think of a modern day Little Women.

What’s on my TV today: Nothing

On the menu for dinner: Have to go shopping tonight so we’re eating out. Tomorrow’s menu BBQ ribs, corn on the cob and roasted potatoes.

New Recipe I tried or want to try soon: I made Kerry Apple Cake for St. Patrick’s Day.

In the craft basket: Noah’s ark picture in cross stitch, I’ve made a little progress since last week.

Spring like weather

Tips and Tricks: For anyone else who doesn’t drink but has recipes that use a little bit of alcohol

Here is a list of substitutions that will work with recipes calling for alcohol (of course if the alcohol is central to the flavor of the recipe it might be best to just skip the recipe):

Beer: equal parts chicken or vegetable broth and ginger ale with a splash of malt vinegar.

White Wine: equal parts chicken or vegetable broth and white grape juice with a splash of cider or balsamic vinegar.

Red Wine: equal parts chicken or vegetable broth and red grape juice with a splash of red wine or balsamic vinegar.

Sherry: same as either wine substitute.

Back to Basics

Lesson learned the past few days: (already learned but was reminded) to take time to play with my kids.

On my mind: Making sure I set a good example for my kids.

The spring weather is making me think of new birth. I’m reminded to be thankful of the New Birth I have in Jesus and am thinking of trying to put forth more effort (a new birth of sorts) in my organizational skills.

Easy Tortellini Soup Recipe

Last night I tried a new recipe that my daughter chose out of my newest Healthy Cooking magazine. Here is the recipe as it appeared in the magazine.

Easy Tortellini Soup Recipe

1 medium onion, chopped

1 tsp. olive oil

1 garlic clove, minced

2 cans (14 ½ oz. each) reduced sodium chicken broth

1 can (14 ½ oz.) diced tomatoes, undrained

9 oz. refrigerated cheese tortellini (or tortellini of your choice)

3 cups chopped fresh spinach

1 Tbsp. balsamic vinegar

¼ tsp. pepper

Shredded Parmesan cheese, optional

 

In a Dutch oven, sauté onion in oil until tender. Add garlic; cook 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally.

Add tortellini; cook for 7-9 minutes or until tender. Stir in the spinach, vinegar and pepper. Cook and stir until heated through and spinach is wilted. Sprinkle with cheese.

The grocery store didn’t have any fresh spinach that looked good so I used about 2/3 of a can of canned spinach instead of fresh. I was also out of parmesan cheese so I used mozzarella cheese instead. Since I was fixing it for supper I also added about 8 oz. of chopped cooked chicken breast for more protein at the same time I added the tortellini and served it with homemade garlic bread.

The soup was very easy to make and tasted pretty good. I think the rest of my family liked it even better than I did. The cheese added quite a bit to the soup in my opinion and Parmesan would probably be even better. When I make it again I will probably use a little more garlic and a little less balsamic vinegar.

Wondering when my husband’s uncle will have a chance to till our garden spot.

Welcome to Lucinda’s Corner!

My First Post

Hello, and welcome to Lucinda’s Corner. Obviously my name is Lucinda, and I’m a stay-at-home mom who lives in a semi-rural area of east Tennessee and homeschools two teenagers. This blog will be about things that are a part of my stay-at-home mom life.

I intend to talk about nutrition and cooking, homeschooling, gardening, crafts, good books and video games, decorating and organizing my home, living a Christian life, and anything else that seems relevant. I don’t claim to be an expert at any of it but homeschooling has taught me you can learn and teach at the same time. What this blog ends up being about will depend on what I feel most comfortable writing about, what goes on in the world and my life, and feedback from my readers and God. I hope some of what I write will help and encourage other homemakers whatever their situation.

I love being a stay-at-home mom. I love teaching my children and learning new things. I’m not so in love with the housework part of my life, but I keep working at it.

I think I should let everyone out there know that I’m not yet real comfortable with writing things for other people to read. In fact it has taken me 3 days and several attempts to write this introduction. I have this one very traumatic memory from early in grade school of getting a writing assignment back with an “A” on the top but with lots of red marks all over my paper. I got a good grade because I had done the assignment correctly but my teacher decided to point out all my mistakes in areas we hadn’t learned about yet to “help me out since I was such a good student”. I have had a hard time letting other people read my writing ever since.

Why am I blogging then? 1) To help me get over my perfectionist attitude about writing. I’ve been helped by other people’s writings even when they weren’t perfect. I’m trying to reinforce the idea in my own head that it doesn’t have to be worded perfectly to be worth saying. 2) To connect more with other people in similar situations. My circle of friends I talk with face to face is small and as my kids get older I’m feeling the need to make contacts outside my current circle. 3) To encourage my children. My daughter is a writer and my son is like me, not shy but not outgoing either. I’m trying to set a good example about doing things. 4) My husband suggested I should.

Hopefully this hasn’t been too long. I welcome your comments even if you disagree with me (I will block spam and vulgar or abusive language). I look forward to writing again soon and to being part of the blogging community.
