Two of my goals for this year are to try at least 1 new recipe a week and to make my teens breakfast once a week (usually they make their own from easy to fix things I keep around the house.) I meet both goals and tried two new recipes yesterday.
I bought mangoes on sale 3 for $1.00 last Saturday so the first was Whole Wheat Mango Muffins. I got the recipe from http://recipes.sparkpeople.com/ . It was submitted by user name RACROBIN.
I altered the recipe slightly. I used only two eggs instead of a whole cup and then added just enough extra applesauce to make the batter what I thought was the right consistency. They turned out pretty good. The whole family agreed the muffins tasted great but were slightly doughy near the bottom. Obviously I messed up the fat to liquid to dry ingredient ratio when I altered the recipe. When I retry the recipe I’ll post the results.
The second recipe was BBQ Beef Soft Tacos from “Kraft Easy Cheesy Meals” small cookbook that I got last October.
The filling was cooked red peppers and onions, lean hamburger meat, and BBQ Sauce. We made part soft tacos and part hard shell tacos. My family absolutely loved them. My husband said they were some of the best tacos he’d had. I forgot to take a picture of them last night so this picture is of the leftovers my kids ate for lunch this afternoon.
